I'd say No Mercy, We used to pull off the 3D and it was fun. I don't think we ever pulled off the 3D in later games. Also, no other major title has allowed tornado tag team iron man. We used to set up a 30 minute game and just break a team over and over and over again.
I think there were a couple GC games that let you interact with the stage more. That proved hours of entertainment. We used to play the Raw stage, set up tables on the stage, then a ladder on the Titan Tron and tried to superplex a guy off the ladder through the double stacked tables, as Spider-Man. Gold. I also used to "attempt" to land the flying Famasser onto a victim from off of the Smackdown fist. I usually missed, or hit my tag partner.
All in all, as the games advanced, I was never as comfortable with the controls and the grapple system as I was in No Mercy.

Wrestlemania XIX for the Cube has pretty much the same controls. I think I'm going to pick that one up again because DoR2 is not working for me at all.

After the last few editions I still feel the older the SD! game, the better (with the exception of the original, dire SD! vs RAW) Shut Your Mouth for me. Legends Of Wrestling III was also sweet as fuck. Clunky, but sweet.
